Vegan Donuts

Ingredients

Dry

  • 1 1/2 cups millet flour or rice or oat flour
  • 2 tsp baking powder
  • 1 tsp ground cinnamon

Wet

  • 1/2 cup apple cider
  • 1 single serving container vanilla soy or almond yogurt approx. 5 oz
  • 1/2 tsp liquid vanilla extract
  • 1/8 tsp liquid Stevia Optional optional

Coating

  • 1/2 cup maple sugar
  • 1 tsp ground cinnamon

Instructions

  • Pre-heat the oven at 350 degrees F.
  • Sift the dry ingredients, then stir in a medium bowl.
  • In a small bowl, combine the wet ingredients, and stir well.
  • Add the wet to the dry ingredients and mix until combined.
  • Pour evenly into six-donut baking pan.
  • Bake for 10-15 minutes, until firm on top and edges.
  • Combine the maple sugar and cinnamon in a small bowl.
  • Coat the warm donuts on both sides in the coating.
  • Highly recommend eating while still warm!
  • Store extras in a well-sealed container.
