Extra Crispy Roasted Brussels Sprouts

I get so many compliments when I bring my roasted Brussels sprouts to potlucks, with the univariable additional comment, “I don’t usually like Brussels sprouts!” The secret to making these cruciferous, slightly bitter greens easily edible is to bake off the bitter notes and make the outer leaves extra crispy. Extra Crispy Roasted Brussels Sprouts
Ingredients
- 2 cups organic Brussels sprouts cut in halves with the stems removed
- 1/2 tsp salt
- 1/2 tsp ground pepper
- 1/2 tsp powdered garlic or 1 Tbsp fresh chopped garlic
- 2 Tbs oil good for baking at a high heat avocado, canola or safflower, or cooking spray for low-fat version
Instructions
- Preheat oven to 400 degrees F.
- Place an empty baking sheet in the oven for 15 minutes. This step is key to taking the sprouts extra crispy.
- Place cut sprouts in a medium bowl.
- Add salt, pepper, garlic and oil. (Coat with cooking spray to make low-fat).
- Toss well.
- Spread out on a pre-heated baking sheet.
- Roast in the oven for 20-25 minutes, until golden but not too shrunken.
- Serve in a colorful bowl.
