This stunning and sumptuous new vegan restaurant located in the uppity Recoleta neighborhood must be added to your wish list. To find it, go to the Hyatt Hotel and head to the back of the lobby, where you’ll find an airy, lush, inviting space.
The menu is 100 percent vegan, with all gourmet items avaliable a la carte. You may want to opt for the very affordable prix-fix menu for lunch or dinner.
I paid all of $39 for a five-course prix fix lunch, which I could not finish. In fact, I asked the server to stop serving after the second course so that I could leave room for desert. I feasted like a vegan queen.
I gasped at the sight of the first course: silky sooth and rich coconut curry soup, flaxseed crackers, a large chunk of whole grain bread, pickled root vegetables and a side of vegan butter. Yes, just one course. I lapped up the soup and crackers but resisted the bread to save room for the next course.

I politely cut then proceeded to inhale the next dish: crusted egglant steak with salsa verde and hummus.

I sighed with satisfaction after finishing the dessert, an icredible cacophony of flavors and textures no vegan dessert I have eaten before or since has rivaled.
The desert bowl included melon sorbet, sliced fresh strawberries and oranges, granloa chunks, sliced almonds and –the highlight–divine shards of aquafaba meringue.

The decor is industrial, with an all-metalic interior and bright red stools for seating, and the location in the heart of Palermo makes the sandwich spot yet another vegan eatery in the area.
I ordered the Vegan Classic, a very processed burger that did not remotely resemble chickpeas, topped with pickles, lettuce and tomaotes. It came with super flavorful, piping hot French fries, which were thick, flavorful and outshown the burger.
